Typically, a standard double espresso uses about 19 grams of finely ground coffee to yield 38 grams of liquid gold in about 30 to 35 seconds.

The secret is in the pressure. Authentic espresso requires about 9 bars of pressure to force hot water through a tightly packed "puck" of coffee. This process creates the three distinct layers of a shot: the dark "heart" at the bottom, the caramel-coloured "body" in the middle, and the beautiful, frothy "crema" on top.

The Science of the Shot: Espresso Drinks Explained

Before we add milk or water, we have to look at the variations of the shot itself. Not all shots are created equal!

  • Single Espresso (Solo): The classic one-ounce shot.
  • Doppio: This is simply a double shot. Most of our milk-based drinks use a doppio as the base to ensure the coffee flavour really shines through.
  • Ristretto: Meaning "restricted" in Italian, this is a shorter shot. We use the same amount of coffee but less water, stopping the extraction early. This results in a sweeter, more concentrated flavour with less bitterness.
  • Lungo: The opposite of a ristretto. It is a "long" shot where more water is pulled through the grounds. It is more diluted and can have a slightly more bitter, developed profile.

Once we have our espresso base, the magic happens with milk. The way we steam the milk and the ratio we use determines whether you are drinking a Latte, a Cappuccino, or a Flat White.

  • Latte: The milkiest of the bunch. We use a double shot of espresso topped with plenty of steamed milk and about 1cm of light foam. It is smooth, creamy, and perfect for those who like a mellow brew.
  • Cappuccino: Traditionally follows the "rule of thirds": one-third espresso, one-third steamed milk, and one-third thick, airy foam. In modern specialty coffee, we aim for a 1.5cm foam layer. The foam acts as an insulator, keeping your drink warm while you chat with mates.
  • Flat White: An Australasian icon! The Flat White story is a proud part of our coffee culture. It has a higher coffee-to-milk ratio than a latte and a very thin layer of microfoam (about 0.5cm). It is the go-to for someone who wants the creaminess of milk but a much stronger coffee hit.

  • Macchiato: In Italian, this means "stained" or "marked." A traditional espresso macchiato is a shot of espresso "marked" with a tiny dollop of foam.
  • Cortado: Popular in Spain, this is a 1:1 ratio of espresso and steamed milk. It is served in a small glass and has very little foam, offering a perfectly balanced, punchy sip.
  • Piccolo Latte: Think of this as a tiny latte. It is usually served in a 100ml glass using a ristretto shot topped with steamed milk.

  • Affogato: More of a dessert than a drink, this is a scoop of vanilla gelato "drowned" in a hot shot of espresso. The contrast of cold, sweet cream and hot, bitter coffee is heavenly.
  • Espresso Con Panna: A simple, elegant treat consisting of an espresso shot topped with a generous dollop of whipped cream.
